Kings County
Colin Spoelman and David Haskell started distilling in Brooklyn in April 2010, which New York Magazine called the city's first distillery since Prohibition. They moved to the Navy Yard in 2012 and sold their one millionth bottle in March 2026.
They build bourbon on a Scotch frame. The mash is 80 percent organic corn from Lakeview Organic in the Finger Lakes and 20 percent Golden Promise malted barley from Thomas Fawcett. No rye, no wheat. It runs twice through pot stills worked for quality over yield, then ages 4 to 7 years. Malt takes the seat rye holds in Kentucky, and reviewers clock the difference on the first sip.
