Thresh & Winnow

Thresh & Winnow is the top shelf of KOVAL. Robert Birnecker and Sonat Birnecker Hart founded that Chicago distillery in 2008, the city's first legal distillery since the mid-1800s. They gave the best barrels their own label in September 2024.

Every release is single barrel and bottled in bond. That federal standard means 100 proof, at least four years old, one distilling season, one distillery, and the DSP number on the label. You know exactly who made what is in the glass. KOVAL fills these with certified organic grain, including a 100 percent millet whiskey it calls rare as a whiskey base.
