Peerless Rye

Peerless Rye was the first whiskey out of the revived Kentucky Peerless, released in spring 2017, and the first rye the company had made in a century. Corky and Carson Taylor reopened DSP-KY-50, Henry Kraver's 1889 registration, and filled barrel one in March 2015.

The rye is built on sweet mash. Each batch ferments on fresh grain and fresh yeast with no backset, which puts more raw grain character into the barrel. It enters wood under 130 proof and is bottled at barrel proof with no chill filtration. That is why it reads green and peppery up front and oily in the middle.
