Keith Hazelbaker opened his Louisville operation on Baxter Avenue in 2016 and brought his sons Carson and Chase in to run it with him. NULU Single Barrel Straight Bourbon launched in April 2020.
NULU works barrel by barrel. Mature bourbon comes in, takes a finish, most often a toasted oak barrel, and goes out as a single barrel rather than a batch. Toasting caramelizes the wood sugars ahead of the char, which is why these bottles show baked apple and brown sugar. Because each barrel is bottled alone, the pick you buy is the only one of its kind.
