New Louisville

New Louisville Whiskey Co. is the older, higher-proof tier from the Hazelbaker family's Louisville operation on Baxter Avenue, the same people behind NULU.

The label exists for the barrels they decide to leave alone. Mature Indiana bourbon comes to Louisville and sits through Kentucky heat cycles until it reaches eight or nine years. It then goes out as single barrels at full proof, often above 130. Recent releases have run mash bills of 75% corn and of 60% corn, a real spread in style. Every bottle is one barrel, and when it is gone it is gone.
