The Henry family has farmed Patton Road in Dane, Wisconsin since 1946. Their corn is W335A, a red hybrid bred at UW-Madison in 1939, brought back from 1,200 kernels of vault seed and grown out to 80 acres. UW-Madison writes that J. Henry is the only known company using it.
W335A carries more protein and oil than commodity yellow dent, and it drinks grainier and more complex than the corn sweetness most bourbon leads with. It joins heirloom winter wheat and Spooner rye off the same fields, then ages at least four years in rick houses on the farm. One farm, one grain, no second source.
