Hillrock
Jeffrey Baker founded Hillrock on his family farm in Ancram, New York, 100 acres of the Hudson Valley, and brought in Dave Pickerell, formerly master distiller at Maker's Mark, to build the whiskey.
Hillrock grows its own grain and floor malts it on site, the first US distillery to do that since before Prohibition. The Solera Aged Bourbon was the first American whiskey aged by the solera method borrowed from sherry, a stack of barrels where a portion is drawn off and replaced so the blend keeps maturing rather than resetting each batch. It finishes in 20 year old Oloroso casks and bottles at 92.6 proof. Start here if you want to taste what continuous blending does to bourbon.
