Dan and Nancy Garrison opened Garrison Brothers in Hye, Texas in 2006, the first legal whiskey distillery in the state. Bourbon reached the market in 2010.

The Hill Country does the heavy lifting. Summer heat drives evaporation as high as 40% a year, against roughly 15% in Kentucky. A young Texas barrel has given up far more liquid and taken far more wood than its age suggests. The mash is 74% Texas corn and 15% red winter wheat, and the water is rainwater caught off the ranch roofs. You are paying for concentration.
