Thirteenth Colony
13th Colony started in 2009 in Americus, Georgia, when its founders made liquor as holiday gifts. It is Georgia's oldest operating distillery since Prohibition. It distills its own whiskey and buys young barrels to fill the line.
What matters is where they sit. The barrels age in Americus, at 72 percent average humidity with 20 degree swings. That cycling pushes spirit in and out of the wood hard, so four years in Georgia does not drink like four years up north. Southern Straight Bourbon is 95 proof, 70 percent corn, 21 percent rye and 9 percent malted barley, four to six years old. You get all of it in writing.
