Leiper's Fork

Lee and Lynlee Kennedy filled their first barrels in Franklin, Tennessee in April 2016. Their core bourbon, Tennessee whiskey and rye are all Bottled in Bond at 100 proof, five to seven years old, one distillery, one season.

Corn comes off the chief distiller's farm, the rest of the grain from within ten miles. The mash is sweet rather than sour, which raises the pH and gives a softer spirit. They pot distill at 137 proof and fill barrels at 110, well under the 125 now allowed. Lower entry proof pulls more caramelized sugar out of the wood. Nothing is chill filtered, so the weight stays in the glass.
