FEW Spirits
Paul Hletko opened FEW in 2011 in Evanston, Illinois, the town that headquartered the American temperance movement and stayed dry for nearly 115 years. He built a grain to glass distillery there, mashing, fermenting and distilling its whiskey on site.
The Bottled in Bond Bourbon runs 70 percent corn, 20 percent rye and 10 percent malted barley. It goes out at 100 proof after four years minimum in a federally bonded warehouse. Bottled in bond means one distillery and one distilling season, so you know who made this whiskey and when. Buy it for a small distiller's whiskey under the guarantee the big Kentucky bonds carry.
