About the Product: New Louisville Whiskey Company sources its bourbon from MGP's renowned distillery in Lawrenceburg, Indiana — one of the most respected producers of high-rye stock in the country — and transfers those barrels to PCS Distilling's Louisville warehouse, where heat-cycling and patient maturation push each one toward its peak. This seven-year single barrel is designated "Dragon Slayer," a name that signals a barrel profile built for intensity: a char treatment calibrated to bring bold, fire-kissed oak character to the forefront — dark, commanding, and unapologetically assertive. Seven years on MGP's spice-forward rye recipe with a barrel this ferocious behind it, and you've got something that earns the name.

About New Louisville Whiskey Company: New Louisville Whiskey Company is the premium single barrel label from PCS Distilling Company, the Louisville family operation founded by Keith Hazelbaker in 2016. Keith — originally a certified financial planner — purchased the distillery after being approached for business advice by two craft distillers, and quickly made it a family affair, with sons Carson and Chase joining the operation. By the end of 2019, the Hazelbaker family pivoted toward sourcing aged bourbon, adding special finishes, and building a portfolio of whiskeys that reflected a more considered, quality-first approach. The New Louisville label was purpose-built as a premium single barrel collection, featuring bourbons earmarked in the warehouse and bottled at peak maturity. A signature part of the process is heat-cycling at their Louisville facility, where controlled temperature variation drives the spirit deeper into the wood, building proof and viscosity before each barrel is released.

    Good flavor

Liked the flavors. Proof a little higher than I prefer.

    Spicy!

Very peppery with underlying sweetness. The sweetness has some nice complexity to it. The pepperiness fades with a little bit of ice. Nice bourbon.

As good as it was when I helped choose the barrel.

GRAND TOTAL: 93/100 (Without Flaws: A benchmark pour with negligible faults to speak of — about as good as it gets.)

BASE SCORE: 50 (Awarded automatically to any whiskey that is not critically flawed.)

NOSE: 7/10 (Leather, vanilla, caramel apple, and subtle baking spices with hints of brandied cherry)
    - Aroma Appeal: 4/6 (Exceptional: Inviting; you want to stay in the glass.)
    - Intensity: 3/4 (Room-Filling: The aroma jumps out of the glass.)

PALATE: 18/20 (Crème brûlée and butterscotch sweetness, with notes of baked apple, new leather, and clove)
    - Mouthfeel: 5/5 (Viscous: Exceptional. Significant weight and "drag." Leaves a tactile residue after swallowing.)
    - Preference: 8/10 (Favorite: This flavor profile is exactly what you look for in a whiskey.)
    - Complexity: 5/5 (Evolving: The flavor changes while it is in your mouth. You keep finding new notes the longer you hold it.)

FINISH: 10/10 (Warm and dry, with notes of pepper, charred oak, dark chocolate, and lingering cinnamon)
    - Length: 4/4 (Long: The flavor stays with you minutes later.)
    - Aftertaste: 6/6 (Resonant: Lingers and evolves. Leaves a warm, sweet, or savory resonance (the "Kentucky Hug"), creating a lasting memory.)

    OVERALL IMPRESSION: 8/10
    - Impression: 8/10 (Solid: You would be happy to be served this, purchase a bottle, or to own a bottle.)
