I've had a couple drams of this Barrel proof so far, and I'm still not sure how I feel about it. I'd heard so many good things about Cedar Ridge from Whiskey Tube reviewers that maybe I was just expecting too much at the outset. The first taste just seemed very young and crafty to me. Honestly, I didn't like it at all. But a week or so later I went back and tried again, and it was a completely different whiskey, with a nice baking spice and vanilla nose, full, soft but spicy mouthfeel, and a great finish. I THINK I like it, but I'm going to have to go back a couple more times to make sure.
