Domenico Canale sold Old Dominick whiskey out of his Memphis grocery house from 1866. His descendants reopened the name on South Front Street in 2017, the first legal whiskey distilling in Memphis since Prohibition. Alex Castle, the first woman to hold a master distiller title in Tennessee, built the production program over nine years.
The house bourbon runs 52% corn, 44% rye and 4% malted barley. That is nearly half rye, a level few bourbons reach, and it puts clove and black pepper where a wheated bourbon puts soft caramel. Barrels go in at 110 proof and come out at four to five years. Memphis whiskey, distilled in Memphis.
