Henry & Sons crafts this four grain rye on their family farm in Dane, Wisconsin, using an heirloom mashbill of Spooner Rye, Red Corn, Winter Wheat, and Malted Barley grown on land the Henry family has farmed since 1946. For Le Trou Normand, they hand-select 4-6 year old barrels of their small-batch rye, blend them together, and then rest the whiskey for two years in Calvados casks imported from France — the same casks used to age the world's most famous apple brandy.
The name references "le trou Normand," a French Normandy tradition of drinking a small glass of Calvados between courses to cleanse the palate and make room for more of the meal. That apple brandy heritage comes through clearly in the glass, layering the rye's natural spice with notes of baked apple, pear, and warm pastry from the Calvados-soaked staves.
